Be careful with nutritional yeast, it has properties similar to MSG. The most notable downside to this is that people who get migraines may want to shy away from nutritional yeast. Umami for Vegans |

This article is spot-on; root vegetables and gourds puree excellently into thick, creaminess. Also, there are plenty of vegan breads (ones that are marketed as "peasant" or "rustic" will often be vegan) that you can de-crust and puree into your soup which will give it some body and richness. I got some from Bed Bath & Beyond, but my favorite place to looks is at the thrift store/Salvation Army; they really have some pretty ones there that you know will be sturdy. Perhaps more basic than making an omelet, I think people should know how to scramble eggs without making them a crunchy mess (some people like them that way, but they should at least know). I also second being able to make rice (or some grain) on the stove in a pot. People should also know how to select and roast vegetables, and how to select fruit. I'm not a giant neat freak or anything, but it seems to me you'd want to empty these out and clean them every so often (especially if you do end up with bugs), and that seems like it would be a huge pain.
