We are redoing our kitchen and considered it too (I blogged about it: http://www.lifeonchurchill.com/2012/04/kitchen-lighting-ideas.html ) the thing is, you have to consider ceiling height. one that you don't have to take a loan out on (in my opinion). in our case we purchased butcherblock from ikea and will be installing it over the next few weeks. also, from a neighborhood perspective what is expected? we live in the city and most homes near ours would have laminate. so butcherblock will be an upgrade.
