You can also use jam (like apricot) over the meat as it rests- gives the same glaze but the fruit makes it a little better. Just spoon out a bit and spread it over the meat right as you would the sugar. The heat will melt it.

Not sure if you can even get any but, last outage here in VA we saved our deep freeze by using dry ice. This can be tricky if the power comes back on and you're not home to remove the ice. But it saved about $500.00 of food for us.

dried cranberries are great in steel cut oatmeal. just stir up the almond butter-lots of stirring. Comes together just fine and last forever!

Now I find just the oppposite. We buy beef from the farmer and the cuts I've had have all been excellent. I think alot has to do with how meat is cooked.

having a glut of zuchinni, I opened a few cans of stewed toms and thin sliced the zuchs and cooked them down. after a half hour or so I placed well seasoned fish fillets (cat? talapia? it was a nice white fish) on top of the mix and poached/steamed them. Served them over spinach spagehtti. I also have quite a few ball shaped squash so pre baked them, cored and clean out center. Filled them with a mix of ground beef onion and chesse and rebaked until warm and melty. Hubs2B loved it and he hates zukes. Then made bison meatloaf- did not over cook it for once (makes it terribly dry). Now I need receipes for beets, other than pickled!

First- they're seeds not grains. Supposed to allow diabetics to be able to have a rice like item. Just check your glucose afterwards to see if you can tolerate it.

I had to laugh about the fluffernutter sandwich. We were preparing lunches for a homeless charity group at our church. Some one brought in sandwiches with that marshmellow spread with pb. Don't you the ones who received those sandwiches brought them back as having gone bad? The stuff isn't very common in VA.

I make parchment packets when I cook fish. Now they make little parchment bags for things like looking fish or chicken. All mess is gone and smell ( fish) after cooking and I've a clean pan. But I do keep a roll of parchment paper on the rare occasions of baking

NoNononononon. Girlfriend might have gone to UR for college but she doesn't have a clue about a ham biscuit. The ham used is NOT Virgina ham-normally a baked ham. It's country ham, you know the salt lick kind. You have to soak it for days changing the water every few hours. She could have gotten at Ukrops when they were still running a grocery store. I'm a transplant from Kansas and even I know this about ham biscuits

all I've got to say is that if you're moving, you'd better be able to tie stuff down before it becomes an UFO (unidentified flying object). My folks owned a travel trailer. nothing on the counters and all doors had to have a good latch- including the frige. A swing or hard curve and stuff goes flying!

how about how to use herbs and spices to change a dish. I've practically got a Penzsy's in my backyard and if you'd look at my spice rack, you'd think I own stock in the company ( I don't) I like to change things up and not ALWAYS cook the pork roast the same way, or the meatloaf.. you get the picture.

Meatloaf!
Roasted Chicken (just read the post "A Million ways to Roast a CHicken)
Fruit Salad (always refreshing).
I make a kale dish that wilts the kale in bacon grease (barely a tablespoon), after wilted add stewed tomatoes and crumbled bacon -can also add shallots and garlic.
creamed spinach, creamed peas (add shredded swiss cheese)

Saw a show on PBS this weekend, Cooks Illustrated?, anyway, they were making a porkloin roast in the crock. First try was a soupy mess and no taste, Second try was a should roast roll tied and then browned. After that, saute onions, garlic 1Tab tomato paste, a can of tomatoes well drained and 1/2c white wine. Cook all that down and pour over roasts in pot. Then they used carrots and parsnips cut into chunks. After 9 hrs on low or 4.5 on High, it came out lokking mighty fine and not soupy but did have a gravy.

My fiance drinks coffee 24/7 so when he has meals with me, coffee is served during the meal. I normally don't drink coffee with a meal unless we're dinning out or it's breakfast. When having a dinner party (which is rare due to my teeny tiny apt) coffee is always available but most will have it during dessert or afterward. My mother served coffee during meals if wanted as well.

My mother's favorite "company dinner" dish was beef stroganoff. We had it whenever we had company over. Since she would accompany it with dessert of homemade apple pie, I always thought it was made from scratch through and through. She didn't like my then husband and I had to wait for 10 yrs after we were married for the receipe. Imagine my surprise and disappointment when I found out all it was was a combination of cream of tomato, cream of mushroom, round steak and green pepper with sour cream thrown in at the end over egg noddles. Come to find out she got it from her MIL back in the '50s.

Now to debunk the thought that the butter must be room temp in order to work it into the batter. Read that a scientist decided to try out the "myths" we have about why we do certain things when we bake or cook. Turns out that making sure the butter is room temp in order to bake is a fallacy. The colder the butter the better due to the air factor. The reason everyone jumped on the bandwagon was back in the '50s when the hand mixers came out, they couldn't take the grind of mixing the cold butter while the old stand alones had no problem. So apparently to keep those cookies and other bake goods light and fluffy keep the butter cold!
