This is indeed a lovely touch at Blue Hill. I think this idea may have originated with the venerable French chef Alain Ducasse. When I was at his restaurant in Paris in 2002, we were also treated to the tea cart experience with fresh potted herbs. Of course, in typical Ducasse-over-the-top fashion, the presenter of this sterling cart put on a white cotton glove to handle, snip, and steep the herbs. Crazy! I have Abyss towels, and they are absolutely AMAZING. They are pretty expensive, but they have the widest variety of colors of I've ever seen and unique finishing. I LOVE them!
