Very interesting reading!

In my adult life, I shied away from taking vitamins until a couple years ago. I began taking whole food prenatal vitamins for about a year prior to my pregnancy. Certainly this isn't scientific proof, as someone who had the flimsiest fingernails and super fine hair, after a bit of taking the vitamins my nails and hair grow faster and are much, much stronger. I HAVE nails now! My skin was better also. As far as my diet goes, I have always tried to eat healthy and well balanced, so it wasn't a change there. I can't say what's happening internally though!

My laptop is usually kept on my kitchen island rather than my office these days. With our open floor plan, it's a great central spot to keep one eye on my toddler as she plays. I only really use it while I am cooking if it is a new recipe though; if a recipe is a keeper, I prefer to have a hard copy. I have found that when I cook or bake with a recipe off my computer screen, I am more likely to miss steps or make mistakes.

It's funny, whenever that drip or splat lands on one of my favorite recipes, I momentarily cringe and think, I really have to print a new copy of this. After reading some previous posts, I am going to look at these in a new light. The most stained recipes are often our most favorite.

I wish I had tasted "real" buttermilk. The store-bought variety does not get purchased too often in our household, just for specialty items every once in a great while. When I do buy it, I pull out all of my buttermilk recipes to use it up, which is done quite easily-none gets wasted. Buttermilk fried chicken, buttermilk biscuits, buttermilk waffles... that pretty much does it but it uses it up nicely.

Fried chicken was one of my very first culinary hurdles I jumped, and with great success. My friends and family have all been blown away by my fried chicken, but like others have mentioned it is a once, maybe twice a year indulgence.

My method is to season with salt and black and cayenne pepper, marinate in buttermilk overnight. Flour, egg wash, flour again, and in the oil the chicken goes. I fry the chicken for a couple of minutes, then remove and place on a slotted pan, sprinkle with salt, peppers, and various herbs, pop it in the oven to finish baking (and draining) there. The "flash" frying crisps the outside, and seals in the moisture. The oil drains off the chicken, so less greasy too. I use less oil, it's not really deep frying. It works for me!

One little thing I always do when frying is to keep a shallow bowl of white vinegar out, I swear it helps with the odor of frying.
