By far the most important things are the lenses. Canon has a great offering of prime lenses (24mm/1.4, 35mm/1.4, 50mm/1.2, 85mm/1.2 and 135mm/2) that are expensive but well worth it.

Im lucky enough to own all of these lenses, and they rock and its hard to tell the difference between bodies, when using these lenses.

I do wish sometimes my 5dmkii + a few lenses would be lighter to carry around with me and smaller in terms of space, so i preordered the fuji X Pro 1.

the 17-40 is great, but lacking f/2.8 is a deal breaker. go for the 16-35 as that full stop makes a big difference.

Most windows machines have Remote desktop to view, and you need the better or "ultimate" versions to use remote desktop. You can also use VNC server/viewer/ for free.

OSx has built in VNC server/viewer its completely free, there are tons of Open source software and support online

there are also free iOS and android apps for VNC

i have both a infrared and a thermapen,

While the infra red was cheaper (newegg sale) it only reads surface temp, no probe. I very much enjoy the termapen but do agree that it is pricy

newegg has a pt-100 for 65$ a much better price

So, im not sure you know what pot stickers are, but here goes my explanation straight from my grandpa

shuijiao is the steamed or boiled dumplings,

Jiaozi also know in english as "pot stickers" is fried.. but not like deep fried pan fried.

and here is my advice. when making dumplings (everything including the wrapper from scratch!) we boil everything right away as we make it. usually we make close to 200 (with 1 bag of flour)

and then when we want to serve or eat them, we pan fry them
a little oil on the bottom of a non stick pan, then place all the dumplings on the pan, heat up until the bottoms brown
then throw in a dash of water ( to steam the tops, and then a dash of soy sauce to give them color)

SO i would steam at home, and bring them to ur party, and pan fry them quickly there.

Usually the pan frying takes just a few mins and it heats things up and give the wrapper a nice little crunchyness
