Yes. I went several years with mine unplugged. Only turned it on recently because I had meat and cold drinks. It just takes more planning and thoughtful approach to buying and eating to go without a refrigerator. I found considerable savings in no electricity use and buying only what I intended to eat within 5-7 days.

I have been using a small induction cooktop for 2-1/2 years and I love it. It hits more quickly than electric. I believe you are okay with the French cookware. Cast iron and stainless steel are the only metals you can use with this. Go for it, you'll love it.

I use an induction cooker every day. It is compact - a hotplate that heats really quickly and cools immediately.
