One of the tricks to cooking fantastic scrambled eggs is to keep stirring them over low heat. For that matter, over easy and fried eggs benefit greatly from a gentle heat as well. All this talk about a screaming hot pan makes me very nervous for the finished state of these eggs. While I agree that a generous application of fat can be useful in mitigating sticking, I must side with the nonstick or cast-iron pan proponents for a more dependable low-heat cooking option. I've got to second talon up above. Take the top and bottom off, then 'unroll' the skin of the pepper with the knife. Produces a nice, even rectangle to dice evenly. You can, of course, use the trimmed top and bottom as well. Ming's demo is very good. This method produces the least waste and leaves you with a consistent product...it's a winner! Magnetic knife strips are indeed lovely. When using them, though, be sure to rotate the knives on and off the strip on the blunt side of the blade.
