Haven't tried it yet, but have had this homage to Jimmy Dean bookmarked for a while (since I live abroad, where we can't even by the processed kind!). I make a version of hot italian sausage all the time, just starting from lean ground pork and adding spices - so I'm sure that breakfast sausage can be done!
