When I made gingerbread pancakes recently for Christmas, I added some brewed coffee to the batter. You don't taste it in the pancakes, but there's definitely 'warmth' you get like in gingerbread. Be careful with adding too much cloves. Been there. Almost medicinal pancakes. I'd up the cinnamon and ginger. I second the molasses, or use dark brown sugar. Good luck!
