I would highly advise against buying only nonstick as well. My parents owned a large set of T-Fal pots and pans that I inherited for college, and for only being about six years old they are already flaking. You likely won't get the browning that you want, and you won't want to use them at super high heat. Look into All-Clad, Swiss Diamond, cast iron. You will be happier with the few awesome pans you own than the cupboard full of pans that don't fulfill your needs.

I would just buy a few of the stainless steel pieces and a Copper Core sauce pan if she melts sugar or chocolate, or makes delicate sauces. She really doesn't need copper pans for every task.

In the directions with my stainless steel All-Clad pan, it says that salt might cause brown spots or pitting. They suggest that you cook your food for a bit before adding salt.
