These were my first empanadas and the recipe was really great. The dough was easy to work with and the filling was just enough for 8 large (6in) empanadas. The filling smelled amazing when it was cooking, but I'd probably increase the spices for more flavor next time. That being said, with the salt sprinkled on top (a MUST) and some sour cream garnish, these were quite tasty!

Oo, I used to get cocao ravioli stuffed with butternut squash in a sage brown butter sauce. I'll bet the squash/sage combo would work well with any choco-pasta.

These are in the oven right now! My shortening/sugar never really seemed to get fluffy and my dough was a little dry, so I wet my hands while I was forming the balls. The house smells fantastic right now. I <3 cinnamon.

Also, I had to smoosh the cookies as they were still very ping pong shaped after 12 minutes, then I baked them another 5 (my oven is weird). These cookies are just about ideal. Great texture and super tasty!

At Po in NY. I remember thinking my salad was ok and my entree was ok, but I would have stabbed someone's hand if they came near my dessert! It was a slab of chocolate, almost like fudge and with some kind of almondy, amaretto flavor that highlighted, not masked, the quality of the dark chocolate.

Passover may be the only time of year when I get tired of eating, but you still have the whole realm of fruits and vegetables to work with!

I resort to matzah for breakfast, veggies (salad) for lunch and usually something a little more creative for dinner (matzah meal blintzes, matzah lasagna, matzah brei). I do usually up my intake of eggs and cheese during passover as I'm a vegetarian and it really hurts to give up my legumes!!!

I used a vegetable stock in place of the turkey and cooking sherry instead of amontillado and this still turned out great. A perfect tummy warmer on a rainy day.

I always forget about leftovers, so when I make a casserole just for 2, I put it in a glass loaf pan. Pretty much keeps that volume/surface area ratio though, as noted above, sometimes the cooking time should be reduced.

This was my first meyer lemon dish and I thought it was great. I used barley instead of farro and israeli couscous, but otherwise followed the recipe. The almonds were a must, but I loved the flavors and the textures. Now, if I only knew what to do with the rest of my meyer lemons!

As a vegetarian cook, I do love the presentation of stuffed squash (looking for a centerpiece dish? Stuff a whole pumpkin!) but I also love tarts, galettes, and quiches. They're easily assembled ahead of time, leaving you less stress on busy days, and can be filled with just about anything. The last one I made contained spinach and aged gouda, but I think my favorite this season combined sliced peaches, rosemary, and gruyere! Pre-cook! I usually halve and roast the squash, cook the grains and mix them with other stuff, then just stuff the squash and toss it in the oven long enough to heat everything through.
