I have an excellent Chocolate Chip Cookie recipe (for those of you willing to let the dough chill overnight). My mom has celiac and makes this recipe with Mr. Ritts' GF All Purpose flour -- a hit among fellow celiacs and my non-celiac, very-picky dad. Note: if you use Bob's Red Mill GF AP flour (the one found in most supermarkets), I believe you have to add xanthan gum (about .25tsp per c of flour). I made pumpkin dog biscuits as gifts for my friends w/ dogs last year. The pumpkin helps regulate digestion apparently. My recipe uses whole wheat flour, but you could substitute chickpea flour (the science-y purpose of gluten is not as important w/ dog treats, since they probably won't be complaining about the texture of the biscuits). Not really traditional Thanksgiving, but if you have access to a pasta roller, you could make fresh pasta; or make gnocchi w/out a roller (you can use water or an egg substitute if they don't eat eggs). Here are a few of my recipes: Ricotta Gnocchi in Tomato-Basil Sauce Fresh 4-Cheese Ravioli w/ Mushroom Sauce Swap out cheese for spiced pumpkin filling, and the mushroom sauce for a sage brown butter sauce and you get a festive fall dish. Fresh Fettucine w/ Pesto, Broccoli, and Mushrooms Do they eat fish? If so, my Sole Meuniere is a great and simple dish. For a more festive dish, you could make a butternut squash risotto (just make sure you use vegetable stock). Help! As far as the fruit salad goes, it's not the traditional canned-fruit-in-whipped-cream variety, but is way tastier: apples, pears, and dried cranberries, tossed w/ a blue cheese/gorgonzola/stilton; i love adding arugula or radicchio and candied walnuts or pecans to this too; can also serve on endive leaves I'm Being Forced to Bring a Relish Tray to Thanksgiving! Both of these quiche recipes are great re-heated the next day. Make on Thanksgiving Eve and pop in the oven the morning of Thanksgiving. Bonus - they're both pretty filling, so you can keep your energy up throughout the day.
