Ice cream cake - seriously - crush a few cups of oreos in a 9x13 pan, cover with a layer of fudge (butter, few egg yolks, chocolate chips, powdered sugar) the once that's set, 1/2 gallon vanilla ice cream softened and the coconut milk, poured on top, toast some coconut to dust, allow it to set and enjoy. Family fav - though the original top layer is vanilla ice cream with 2 shots of creme de mint... sometimes you need to switch it up

why not treat it as savory oatmeal, after cooking on the stove-top mix in finely chopped bacon and green onions along with a little parmesan cheese? Or treat it like a base for fried rice and toss in any bits and pieces in your fridge as your taste buds desire. Sounds like a fun challenge!!!

I love the idea of a big pot of steel-cut oatmeal in the mornings and I'd recommend a big batch of veggie soup that you can easily add a protein to if you'd like. Or roast a chicken (while studying) on Sunday (Jamie Oliver's Chicken in Milk maybe?) and then pick on it all week long...

though I'd be lying if I didnt say that during grad school finals week I lived on clementines, green tea, diet dr pepper and sour cream cutout cookies... for 7 semesters.

i love making them in the crockpot/slow cooker. Scrub clean, dry, poke with a fork, then wrap in foil. Throw in the crock on low on the way out the door to work 8-10 hours later amazing potatoes. (or on high for 4ish hours). The insides are creamy and have a huge potato-essance flavor and the skins become crispy

And always make extra that way I have leftovers to make baked potato soup later in the week - plus no wasted energy/time since your crock is already running.

I have my monthy dinner party with this girls, and the theme this time is "Heels, Hoops, Sticks & Suits" a product of "Caliente" July gone completely loco!!! Since the requirement is that the food be on a stick (wear your heels, biggest hoop earrings and bring your bathing suit) I was at a bit of a loss... the hostes was doing kabobs, all of the obvious things we're boring until I embraced the season - Caprese Salad on a stick!!! Sweet cherry tomatoes from the farmers market, basil from my balcony and fresh mozzarella all threaded on skewers and drizzled lightly with reduced balsamic vinagear and olive oil - I wish I had remembered to take a picture.

@danielboc - that's exactly what I do. Today's "leftovers" get thrown in the freezer on the way out to the door this morning and become beautiful, flavorful ice cubes to use tomorrow morning. Hot, fresh coffee + coffee cubes + dressing of choice = happiness

quiche would be one of my (semi)quick weeknight "casseroles" - Grab a pie crust from the freezer (my recipe makes 3 - so the left over ones are reserved for quiche or quick pie later) It's great for using up left over odds and ends, onion? spinach? frozen "crab"? ham? chedder? swiss? goat cheese? go crazy - chop/dice/saute down, throw in shell, pour over the eggs toss in oven. Go move laundry, clean kitchen etc etc etc 45 min later dinner! what's better than that?

as a lactose intolerant person, it took me a while to find a happy milk "substitute" - especially for one who used to drink 3-4 huge glasses a day.

Though soy was the first step, and rice felt awkward, almond is an amazing answer. I've found Blue Diamond, specifically the unsweetened, plain is the best. Great for ceral, pretty handy in cooking (though not all) and the shelf stable box is great. I can buy tons on sale and use them as I need them. Though recently my local Meijer's started carrying the large refridgerated containers.

@ScottArany - and though I love goat cheese - I can't quite make the leap to goat milk, plus the lack of rediably available sources for me.
