I recently ran across a recipe that used applesauce to make it clumpier. Couldn't find the recipe again, so I just stirred in a half cup of applesauce to my normal granola recipe, then baked it at 275F for an hour+, until it was completely dry (the applesauce added moisture that needed to evaporate).
