Yes, red carrots. Who knew? I grow them in my garden, they are less sweet and slightly earthier tasting. Beautiful on a veggie platter when you are entertaining. Try looking for them at your farmers market in the spring.

I have made the Zuni Cafe rendition of this recipe and they do freeze so beautifully. I made a whole slew of them with homemade ricotta. A great choice for easy entertaining if they already happen to be in your freezer.

For a healthier option, I skipped the sugar and ice cream and added Greek yogurt with frozen strawberries. It was delicious and still seemed like a yummy treat to slurp down.
The kids loved it, too.
