I'm Greek and a lot of the dishes that accompany the Easter meal are vegetarian and seasonal. Tzatziki, fava spread, roasted potatoes in olive oil and lemon, artichokes "a la polita" (http://www.greek-recipe.com/static/content/Artichokes_a_la_polita.html), and a simple chopped romaine salad with fresh dill, cucumbers, feta and a simple olive oil/s&p/lemon dressing (I embellish it with avocado sometimes). I got a pressure cooker about 10 years ago as a gift, along with Lorna Sass' book, Vegeterian Cooking Under Pressure. There are some good recipes, but even better are the charts for cooking different beans, rice, and grains. So fast and easy to translate any soup/grain recipe into a pressure cooker recipe. I add defrosted corn kernals to my black beans, along with some homemade cilantro pesto (substitute cilantro for basil and leave out the cheese) and cooked rice. Easy lunch and all ingredients are available year-round! The Can O' Beans Lunch: Avocado-Lime Black Beans |

I have been making this recipe the last two weeks and love it. Once time, instead of the seeds, I used pecans, golden raisins, and slightly crushed fennel seeds. I also practice vipassana. I do a version of the loving kindness meditation before I eat - remembering someone who is suffering and wishing that they be relieved from suffering. Pema Chodrun also talked about the three bite meditation (I think it was her). The first bite, you remember someone who was kind to you. The second bit, you remember a guru.
