I have the immersion blender in the first link above, and it's great. It comes with a whisk and a mini food processor attachment, both of which have been very useful.

I have a few recipes for pie dough that work best in a food processor, though, and I'm not sure how you'd do that with an immersion blender.

For what you mentioned, though, I'd go with the immersion blender (or both, in the case of the Cuisinart). Plus, it's so much easier to clean.

Clearly the ice cream comment was a joke.

I second the 6" cake idea. Sure, you have to buy different pans, but they're actually useful for lots of different things (roasting small portions of vegetables, individual pizzas, quiche, and on and on). The individual mug cakes are OK in a pinch, but it doesn't take much more time and effort to mix up a "real" cake to stick in the oven with a better texture and flavor.

Kneading by hand isn't difficult. I actually rather enjoy it, even though I own a KitchenAid. I only pull that out for difficult doughs, nothing I tried when I was first making bread.

Baked some rolls last night, and they turned out perfectly! I cut down the rising time to about an hour by putting the bowl in a warm oven (heated to 200 for a few minutes, then turned off). I usually don't proof dough in there; I was surprised how fast it rose! These are going to be a nice touch at a dinner party tonight. Thanks for the idea!

I made two pumpkin pies around Halloween, and the one from a yellowish pumpkin turned out better than the one from a can. I used the recipe above for both. I think if you strain it and cook it before baking, you'll be OK!

Refried beans! In a bowl with burrito-like toppings if the tortillas are too much to handle. Or maybe tear the tortillas into small pieces and heat them up till they soften.

I would take this opportunity to eat soft cheeses, like brie :)

If you like Indian food, saag paneer or other vegetarian dishes could be your friend. Also, I once made channa masala and ended up blending it all up in the end (the tomatoes were too chunky for my boyfriend's taste and I had already added the chickpeas), and it was still super delicious. Could be a good way to add some different flavors to your diet (and you could add some kale or spinach to the blend to increase nutritional value).

Some grocery stores in my area do sell celery by the stalk, but it's not a common practice. I usually just skip it (sometimes even when a single stalk is available) because you're right, it's often not essential, and the boyfriend isn't a fan at all.

It would probably work with beef, but honestly I loved it the way it's written. Ground turkey/turkey burgers sometimes turn out dry, but this was nice and juicy and flavorful. My boyfriend is not usually a turkey fan, but he proclaimed this recipe delicious and asked that it be added to the regular rotation. The spice and onion (I used regular onion) made the meat feel a lot richer, if that makes sense.

I'm thinking banana bread or zucchini bread or other kinds of moist breadlike items would not go stale. You could toast slices and eat them with peanut butter in the mornings, or have them as a snack all day long.
