I like this idea in concept, but I do see the practicality issue--i have to ask, for all the skeptics:
Have you heard of kitchen curtains? Seems to me the cabinets would be no worse, and if one gets splattered, you could just (gasp!) take it down and wash it?
I might consider trying this in a classy vinyl. Anything is better than the 90's honey-stained oak cabinets our new rented house has.
