I just made these muffins with banana instead of mango and they were amazing. Three days later, the very last muffin was as moist and tender as they'd been the day they were baked. Terrific recipe!

I have always thought the K-cup options to be incredibly wasteful. Millions of people don't seem to care though, and that bothers me greatly. All that waste is awful, and it gets worse each year.

The idea of having to 'brew a full pot' is a somewhat backwards thought these days, with the invention of so many different coffee brewing options, most importantly, a french press coffee maker, that comes in sizes from a single cup to a larger device that makes up to six. Or the type that sits on top of your cup, or small pot and brews directly in to it as your pour water over the grounds. The wasteful K-cups are yet another product of the impatience and need for immediate gratification that dominates our culture.

I've been making this with kale for months and still can't get enough of it. I haven't done it on a sweet potato, but it's wonderful over both pearl couscous and brown rice. Thankfully my market sells 1# bags of prepared kale, which makes this simple to whip up on a moment's notice.

I keep a jar of this on hand also, and love to toss it in brownies and even in chocolate chip cookies. I'm an absolute coffee fiend, for flavor and smokiness though, and could add this to just about anything with chocolate.

I discovered sweet potato leaves at the Farmers Market. Like spinach but more tender, with a pronounced sweet flavor, these leaves were a complete obsession for me in my exploration of dark leafy greens. I loved them and can't wait until next year to eat more!

This cake caught my eye from the moment I opened the page and of course, it went from printer to countertop in a heartbeat.

The thing is, I do love this cake, even with the regular old molasses I used in place of blackstrap, but the minute the finished batter was together, I took one look at it and declared 'There is NO WAY this will fit in a 10" springform pan.' which, by the way, was sitting on the counter, sprayed and waiting.

So I switched to a bundt pan, and it STILL looked, at one point, like it might overflow the pan, but the edges caught, browned and firmed up perfectly.

And reading over these comments, it seems I am the only one who had that thought. The cake in the photo looks like a perfect 10" springform. Mine would have flooded out over the oven floor.

Odd...... cake is delicious. Regardless.

I'm eating so much chard. I just love it. I roast the ribs along with potatoes and carrots for a nice twist on roasted veggies. It's a good way to utilize every bit of the vegetable.

I did this last year, but also grilled the onion, the tomato and the lime halves that went in it as well. The overall flavor was so amazing; smoky and intense with a big avocado flavor that you just can't get with them normally. It was an eye-opening experience.

I love being creative but am no good at any crafts, despite trying lots of them. But I am an exceptional cook. The kitchen is where I get to shine, where I can really allow my god-given talents to come out, and where I can use those talents to make other people really, really happy. This past summer I got hooked on fresh garden tomato and diced avocado in my mac & cheese. Regardless of what I put in it, it's always topped with herb toasted panko crumbs. Mac & cheese is woefully sad without it.

Rub it. I hold it horizontally in my hands and rub the cob vigorously. I've also used a soft brush.
