We did the exact same pink theme for our daughters second. We did pink fruit for the kids and pink iced cupcakes. It was late afternoon so we did pink cocktails for the adults ;-) I did pink plates utensils and table cloths. For decorations I did a bunch of pink balloons in thee or four shades some in helium some regular air (the kids loved kicking them around)
For an activity I did a pink playdoh table. Toys r us you can buy individual colors for 0.99, I cleaned them out of everything between white and red. For a favor I sent the kids home with a pink playdoh some pink candies with a few of the balloons tied to it

We have a similar situation, our daughters room has three external walls so it's temperature fluctuates a lot more than the rest of the house. It's not cute, but I highly recommend a monitor with thermometer. We have the phillips avent. It is so nice to know if it is too warm or cold without having to go in and risk waking her! Good luck.
