I just got back from a family vacation!

We made this: http://www.thekitchn.com/recipe-braised-coconut-spinach-chickpeas-with-lemon-164551 (easily scaled up for lots of people and each person got their own sweet potato! Everyone loved it!)

We also made a few things from this cookbook that I absolutely love: http://amzn.com/1592333745 (spicy bean burgers were a hit too, with a side of baked sweet potato fries or kale chips)

I just tried these (in a greased cupcake tin) and mine didn't rise either... they kind of shrunk.

It didn't say how high to fill each cup with the batter so I did the regular 3/4 of the way. I think next time I'll fill them to the brim.

I tried Sprouts one time several months ago and I haven't been back... their produce section was seriously lacking on anything organic and the regular grocery area didn't have most of the things we needed.

Some of my co-workers rave about it, but I prefer to keep making two stops aside from my local farmer's market (Whole Foods for produce, TJ's for everything else).

Fresh Raviolis from Trader Joes + either pesto or marinara.. so yummy and it only takes 10 minutes tops! (Way better than any microwave meal or ramen!)

Okay, judge me if you will... but my bf and I just got back from Paris and we are *super* planners we were there for 9 days and in preparation we made this:
