This looks really yummy. I'll have to seek out Mung Beans. This is also like what we do several nights a week. We make a basic salad and then add 'everything but the kitchen sink'. We add items similar to the combination above. So, if you need a bit more for your meal, make a basic salad and add to it as you want. Thanks for the recipe! Warning! Try your metal tub BEFORE the party. We purchased a metal tub for drinks at Target. (Not the tub pictured here, but similar) On the evening of the party we set it up with ice, beer, and wine. Slowly, the tablecloth under it got wetter & wetter. We thought it was condensation at first but no, it was a leak! As guests were arriving, we were in the backyard dumping ice into a kitchen trash bag and placing that down into the tub so we could still use it.
