Just made Smittenkitchen's oatmeal raisin cookies but used 1/2 the butter and swapped in some applesauce. YUM. Made macaroni and cheese with peas and onions baked and less cheese to lower the fat. I just made the best sweet potato, lime/coconut soup with some fresh spinach- I can't find the specific recipe online. It's a copy from my mom. It's amazing. Tonight I'm making tofu fingers with some type of veggie side. I really want to bake homemade graham crackers but I have no limits when it comes to baked goods. What's Cooking This Weekend? When I first looked at the pics, I thought it looked like a really sweet kitchen. I can imagine sharing glasses of wine with friends and catching up. Then, I scrolled through the comments and thought hmmm, is it not as cute as I thought? I scrolled back up and it turns out I was right the first time. Love it! Tomorrow night I'm making the fat-free vegan's tofu jambalaya and a WW's king cake along with some bean dip and tortilla chips for a get together. Tonight I went to a dinner party and my friend made potato saag, seasoned rice, cucumber/tomato raita and some yummy lentil dish. I am now entering the Indian phase of my life. YUM! I've used another homemade one with Dr. Bronner's, vinegar, washing soda and I can't remember the other ingredient but it left a weird feeling on all of my clothes. The Dr. Bronner's does, like lainamae said, fade clothes. :( Make Your Own Dr. Bronner's Laundry Soap |

OK, I finally got around to making these. I used 1/2 c. unsweetened applesauce and 1/2 c. oil in place of the 1 c. oil. They turned out great! I would up the salt 1/4 t. next time. I also would probably only use 3/4 c. maple syrup. Cookie Recipe: Life-Changing Vegan Thumbprints |
