Kat88, I'm a vegetarian and find this breakfast recipe (if you eat eggs) to be endlessly adaptable to whatever you have on hand. Includes pasta, veggies, eggs, and cheese. I bake mine in a casserole dish and then slice and wrap to grab on the way out the door. I used to have an apartment that was right around the corner from a Whole Foods. By going there all too often I discovered that they seem to have better deals on Tuesday and Wednesday. I wouldn't necessarily lump seitan together with all fake meat. Though it would have been so much more 'Martha-esque' had they made it from scratch given that it's easy and only requires basic ingredients. Making veganism more mainstream is great in that it may encourage people to, at a minimum, reduce their reliance on meat. If a large number of people made just a small change it would make a big different in terms of population health and environmental sustainability. Did You Watch Martha's Vegan Show This Morning? |

This is actually nutritional issue with pretty extensive global ramifications. Here's a pretty good summary by the World Health Organization: http://www.who.int/nutrition/topics/idd/en/. In the past I was involved with a research project and one of the things being looked at was whether the Burmese government was blocking the production of iodized salt (measured using testing kits tacked on to a morbidity and mortality survey) and if so, could that be classified as a human rights abuse. I recently had post-parasitic IBS from volunteering abroad, and while people's triggers are different, many foods listed here are common triggers for folks with IBS, especially coconut milk. I learned a lot from this website: http://www.helpforibs.com/. It looks kinda shady and like it's trying to sell you a bunch of stuff, but it's really not and it was also the ONLY thing that helped me not be doubled over in pain after every meal. The main tenants are 1.) eat soluble fiber with wild abandon, 2.) eat insoluble fiber cautiously, 3.) keep fats to a minimum. She also gives really helpful suggestions about when (often) and how (always start off with safe foods and then add other foods) to eat. I got the book as well, but the recipes aren't too vegetarian friendly and I didn't use it that much. The website has everything you really need to know. Help! i really like to take a carrot peeler and shave off sweet potato strips. Lightly spayed with oil and roasted for a few minutes on each side, they're a great garnish. I'm sure you could try other vegetables, as well. 7 Healthy Soup Garnishes |

i had a friend make a career switch from the nonprofit world to design and she did it by taking a few part-time jobs in different boutiques in the dc area. while she was technically doing retail for a while, she was able to make contacts and build her portfolio. in less than a year it led her to a job at a small firm and design school. i'm not sure if this would be something you're interested in, but this site has an alternative to a murphy bed that folds into a chest (it comes in a full size): http://fu-chest.com/zzz_fu-chest.html. while its not as pricey as a murphy bed its still an investment, though it might be worth it for you.
