This made a wonderful quick but fancy dinner for two! We used zucchini instead of tomatoes, and the foil did not affect the taste at all. I like the idea of using a layer of lemon slices as a base, will have to try that next time! My boyfriend not only finished his whole portion but was eyeing mine as well, so this will definitely become a regular on our menu.

Do you have any alternatives to chili that does not have tomatoes in it? I can't eat tomatoes anymore and miss chili so badly, especially during the winter months!

Did you try anything with spinach, and if so how did it turn out? I usually buy a large amount from the farmers market, but then every time I want to incorporate it into dinner I have to wilt it first...wondering if I could do this one time instead of five, and keep the leftovers in the fridge?

This tastes great! Although I only made one zucchini for the trial run, which did not produce very much once it cooked down, I will definitely be repeating this soon, with a lot more zucchini! Zucchini is not something I normally eat- I too find it uninspiring; this recipe is a great way for anyone to sneak a little more 'green' into their life.

We serve them at the restaurant I work at in D.C. where we offer them as an appetizer grilled, or we also serve them tempura-fried and stuffed with jumbo lump crab meat and havarti cheese- very very good. They definitely have a kick to them.
