I'm willing to try almost anything to keep from crying and whining while chopping onions! So far the very best method I've found is using a food processor. In our last kitchen we didn't have many drawers, so we used plastic tubs/bins to separate the lids from the bottoms, and kept the bins on two shelves of a narrow low cupboard. That way we could slide the tubs out like drawers. In our current place, we have lots of drawers, so we keep all lids in one and all bottoms in another. This system has worked amazingly well for us. I just made scrambled eggs in a stainless steel pan. Normally we use our cast iron but I had started out to make something else and changed my mind. The pan was already hot and so was the oil, so I just went for it. I was sure they would stick, but they didn't, and clean-up was easy. It had to be the hot pan/hot fat combination, and possibly also the fact that there was more oil in the pan than I would normally use for eggs. @youngj: What they're talking about is called a "two-part canning lid" where the flat disc-shaped lid sits on top of the jar and the ring-shaped band twists onto the the jar over the lid, holding it in place. It's best to use jars designed for canning. After they've cooled, store them in a dark cool cupboard/pantry. Once opened, keep them in the fridge. They did a fantastic job of making that kitchen a nicer place to be in and work in. I love that glass tile back-splash. After not having a dishwasher for years, I was so happy that our new place had one... until I tried to load it. Our dinner plates can't stand up in the bottom rack. I can fit 4 of them in if they're practically laying down overlapping, but then what's the point? I can hand wash them in the amount of time it takes to try and fit them in. No big pots, pans, bowls or colanders will fit on the bottom either. And our wine glasses won't fit in the top rack. Too tall. These are not extreme-sized dishes and glasses... it's just a poorly designed dishwasher I guess (full sized too). I've never really taken to the two different silicone brushes I have but I keep them around since they won't melt (or burn) if used in hot pans. As for the bristle brushes, they're cheap enough, so I buy a few of them and write what they're for on the handle with a sharpie (ie. "pastry only" etc.). For some applications they really are best.
