Black bean/sweet potato burritos freeze great and our super easy to make. Saute onions and garlic, throw in a can of black beans (or make your own in a slow cooker) plus whatever seasonings you like and roughly mash with a fork. While you are doing this, microwave some sweet potatoes and mash well once cooked through. Again season to taste. Layer the beans and sweet potatoes in a burrito, wrap and freeze. Healthy, fast, cheap and vegan.

I agree it's uninspiring. I don't hate it, but it's a lot of what you see everywhere. It's like a post just for the sake of a post.

i highly recommend the 3M Command hooks with the easy to remove, no wall damage adhesive. They are a bit pricy, but once you own a few you can move them from apartment to apartment by simply purchasing more of the adhesive strips. I'm currently using 4 in my bathroom...just pay close attention to the weight guidelines listed for each hook. I learned that the hard way.

Savory, quick breakfast idea - crustless mini quiches. They sound much more complicated than they actually are. Basically combine eggs (or egg substitute) with shredded cheese, sauteed veggies (spinach, onions, peppers...) and some chopped cooked ham, bacon or sausage (if you eat meat). Pour the mixture into those nifty silicone muffin cups and bake until firm. They should pop out easy and can be stored in the fridge. Make enough for the week and simply microwave for 30 seconds to warm through each morning.
