I would suggest either cranberry juice concentrate or pomegranate molasses. These are both simply reduced fruit juice. The cranberry is very tart, while the pomegranate is more sweet-tart. You can get cranberry concentrate at health food stores, or even the Vitamin Shoppe, and pomegranate molasses is available at middle eastern specialty shops. I made this right after they first posted the recipe-- it was very tasty and pretty! BUT: you really do have to take it out of the freezer and eat it after two hours. Otherwise it becomes rock-solid. And if you let it sit out to defrost, the outside melts while the inside is still hard. So I'd definitely recommend this for a dinner party, where you could eat the whole thing in one sitting. It was delicious. Look! Frozen Pink Cheesecake with No-Bake Crust | Apartment Therapy The Kitchn |

Salads! It's amazing in Greek salad, or in any simple salad with a lemony dressing. It's also nice in a salad of sliced cucumber, mashed feta, lemon, olive oil, and mint. Yum yum. What Can I Do With All This Fresh Mint? Good Questions | Apartment Therapy The Kitchn |
