I second a vote for vent-a-hood. It's quieter than most other hoods and offers incredible suction. My 30" model has two fans and forgoes the traditional filters or grates. You just remove the fan housing and wash it in the sink or dishwasher. My prior home had a Viking hood with the grates l, but the oil eventually collected at the base of the hood making for a big mess.
