@smultron You can use AP flour for bread and you should be okay. Just don't use White Lily AP flour—it's more like a pastry flour, with really low gluten content. That said, bread flour does make better bread. How To Wing It: Homemade Bread |

Go to your local restaurant-supply store (nobody should ever buy kitchen equipment from anywhere but there), and get some stainless steel mixing bowls. The best way to go is to get one container with holes in it to allow drainage, and put that inside a slightly larger container to hold the water that drains off. I've got one of those probe-on-a-lead digital thermometers, which is supposed to be for meat and such, but the box said it works all the way up to 273 degrees, which covers most temps you'll need for candymaking.
