You are not kneading the dough enough and probably need to use more flour. But as mnapoleon said, normally you would be stretching the pizza dough by hand and not rolling it out, which tends to toughen it.

I use it to make rice pudding as well - infuse the hot milk with any flavoring you like. Serve with roasted strawberries on top (yes, roasted! Plenty of recipes online).

I use the iPhone app "Meal Board" for meal planning and grocery list. You can enter in your own recipe ingredient lists (online using your computer or on the phone using the app) and plan meals using the recipes you enter. The planner will show up to 2 weeks at a time. You then can synch the meal plan with the grocery list and will pull all the ingredients you identified as necessary for a recipe and populate it into the grocery list. And you can add your own items to the grocery list that may not appear as an ingredient in a recipe. All in all it's a pretty nice app.

The only downside is if you grill instead of sear in the pan, there is no fond with which to build the braising liquid. I don't know if the added flavor from the grill compensates for this, but it'd be an interesting taste test to do a side-by-side comparison.

Lentil salads with vinaigrette, and topped with feta, are great as side dishes and can be served warm or at room temperature. Grain salad with farro, barley, wild rice and any assortment of vegetables are good. Potato gratins can be made ahead of time and brought in the baking dish and warmed in the oven before serving.

They are great in a pinch. My only complaint is that they are a little on the small side so if you want a more substantial or decorative crimp on the side, there isn't enough crust to handle that task.

They also make great savory pasties. There was an article on this site with a method for butternut squash pasties and I've used the TJ crusts to make that recipe. A satisfying pasty dinner can come together in no time with these crusts in your freezer!

Restaurant supply stores sell these for much less than $20. I got mine a few years ago and I know I paid less than $10 for it. It's great for making large amounts of lime juice for margaritas.

Dansko clogs are the best. You need something hard that covers your toes in case you drop something sharp, hard or hot. You'll see a lot of professional restaurant kitchen workers wearing them too.
