I'm only chiming in to say I renovated when I bought my little co-op a few years back and put black granite counters in my tiny (pullman) kitchen which I built out more too. There are subtle flecks of light/white color in the stone, but I clearly see every crumb or spill, which I immediately wipe up. With my white cabinets and 1" square green glass mosaic tile backsplash everyone thinks it looks lovely.

Oh my gosh, I was traumatized as a child visiting Southeast Florida with a Palmetto Bugs infestation! Yipes.

I also see a lot of potential and suggest a slight retro vibe that pays homage to the condo's origins but welcomes it to the current day. If it's still really the in-laws place, I'm sure they'd appreciate a bit of the familiar mixed in with all your new ideas. Good luck. And I'm sure the AT community would love a vacation place to visit, which we'd all keep nice and clean haha.

For those worried about cleaning shades, there are always those Block Lamps which look like light bulbs encased in a glass brick. You can just wipe the glass casings clean.
