Great recipe! I was just looking for something to experiment with for Cinco de Mayo and this sounds like just the thing. I've never roasted tomatillos before. And I've never added bacon to black beans.

(And yes, I agree about cooking with the bacon grease, it really does make many dishes taste so much better.)

It's amazing how much time passes when you put off what you can be enjoying right now.

I have really enjoyed participating in The Cure project this month. You wouldn't believe the amount of clutter I've cleared away. It is so nice to walk into my home and see the things I've completed. The motivation factor to keep working on the projects is worth all the time and effort.
The biggest thing that is changing for me is that I'm saying "I'd like to paint that room" and actually doing it! Some of the project/challenges have helped me get things done that I've been saying I'd do for over seven years. Yes. Seven. I don't know why I slipped into the pattern but I have to say that working to get out of the pattern has made me feel great.
It has even motivated in other areas: I'm taking a course on literature.
Thanks for all the work you've put into this project.

Love this idea of containing cords. We actually have two charging areas (one on each side of the couch) Really need to get these into the bedroom and out of view.
Great comment of the day. My boyfriend actually asked, "Are you going to do some more of those cleaning projects you've been doing?" He is really loving the way things are getting done!

Totally enjoyed the new recipe idea! I'm always collecting the recipes that I'd like to try or that look looks so good I'd like to lick the page, so actually DOING it, making the recipe was fun. We made stuffed manicotti for the first time and loved it! (And we got a two-fer in that we have a pan of them frozen for later this week) Mushrooms and spinach and ricotta stuffed pasta with a batch of fresh tomato sauce.. what could be better on a cold winter day snuggled in to watch football? Definitely thinking that a once a month new recipe try would be a good add on to my new found organizational skills. Plus my pile (literally a PILE) of recipes to try might begin to shrink.

I can't believe how things are falling into place right now for these projects! I received a coffee poster yesterday and was just discussing where I'd like to hang it in the second bedroom while making dinner last night. It's poster sized so framing is going to be DIY but that will be a fun project for tonight. Anything coffee related makes me smile so this is a plus plus in my book. Thanks for the inspiration... truthfully, I probably would have talked about it and then put it off for months before it actually got accomplished.

I am having a really hard time choosing so I am going to do the one that I really need done and that is the bedroom closet. The before pictures will be crazy as there are stacks of shoes, clothes, suitcases... just an all out space of yuck. I really need to stop thinking that if I can shut the door it's "okay". So the closet it will be.. I hope January is a long month because once I start this clean out, my outbox will be full.. and I mean FULL.


Day 5: Select One Project from Your List to Complete this Month Apartment Therapy January Cure

I am really enjoying the challenge assignments. Flowers: check. Even received iris bulbs to plant on the patio where I sip coffee in the morning. Today, I set out to mop the floors and scrub the baseboards down. That took some doing as I had to clear everything in order to get to the floor! I had to get down and scrub with a brush and then mop. Wow does it smell great in here. It has been so long since I've taken the time to do this right.
Another side note: this cleaning also lead me to clearing out the bathroom cupboards! Hey I was down there anyway.
Tomorrow, we do the grocery shopping and pick up the cleaning supplies I need. Then I'll vacuum really well and assignment complete! I'm looking forward to next week.

This outbox idea worked pretty well. So far I've placed shoes, a pre-lit christmas tree and the poles to a rolling storage bin I was going to repair (for three years). The most difficult part of the task was just finding a location where it could stay for a week. Clutter is overrunning my apartment right now.

Love this kitchen! Removing that original sink section totally opened up the space and made the kitchen seem longer.It looks like a real window now, not an afterthought. The window's reflection in the mirrored backsplash (really like the way they used this) had me doing a double take, thinking that they had put in a pass through. The cabinets make the kitchen (all that storage would be greatly appreciated), especially the glass front cabinets at eye level.

I am utterly in love with this little house! One of the best parts of making your living space yours, is to put the things you love in every nook and cranny. What better way to spend the day then looking up and seeing something that makes you smile.
You can tell that they have put themselves into making this a home, where you can live and dream. Well done!
