I meant to say, I make "breadcrumbs" from gluten-free sandwich bread. I must have croutons on the brain today! And I do make both of these items myself from the butt ends of sandwich bread.

For my gluten-free friends that are new to making your own breadcrumbs, here's how you do it. Toast up a few slices of bread (or those lonely end-pieces) until they are dry. Tear the toasted bread up into chunks, toss them in the blender. Pulse a few times and you've got homemade bread crumbs. So easy... and I love to put scraps to good use!

Hi there,

Thanks for the notes about the gluten-free issue. As a Celiac myself, my kitchen is completely gluten-free.

I assumed anyone who was gluten-free would add the safe croutons of their choice. But I just updated my recipe to note using GF croutons to make things absolutely clear.

I make my own croutons from gluten-free sandwich bread - it's so easy and usually tastier and less expensive than the store bought variety.

Christine, this recipe makes about 1 and a half cups of sauce. I can usually fill a couple of cute little 1/2 pint jars. Yum!

I too have Celiac disease and am currently on a year-long travel adventure with my family across the South Pacific and South East Asia. I can tell you, every day is an eating adventure!

A few thoughts:

1. All airlines seem to offer a gluten-free meal. It may not always be delicious, but it is safe to eat.

2. When English isn't spoken, I carry a card that describes my allergy and I show that to the waiter wherever I eat.

3. Try to get a place to stay with a kitchenette. Being able to eat a few meals or at least snacks prepared at home is helpful, healthy, and budget friendly.

4. In Asian countries, be sure to ask for "no soy sauce." The hidden wheat is a belly-buster.

5. I want to tell all Celiacs / or those with gluten-intolerance to try traveling in Australia and New Zealand. In those countries the level of awareness about gluten sensitivity is amazing - everyone seems to know what gluten-free mean! Most restaurants have gluten-free options. It is so so easy to travel there... such a delight for Celiacs.

6. Have snacks handy.

7. Order simple foods.

8. Have fun!

Gazpacho is a perfect summer dish - spicy, cool, refreshing and just plain tasty! Those halved tomatoes Monika leaves in the soup are dreamy. I have not yet found a perfect gazpacho recipe - knowing M's way with food - this may be the one.
