Here's a tip I got from Kitchen Tigress' blog - steaming the rice instead of using boiled day-old cold rice. I tried it and it immediately made the texture of my fried rice so much better. Kitchen Tigress has a really good tip and technique for making excellent fried rice. She recommends steaming the rice, instead of boiling it or using leftover day-old cold take-out rice. The blog post is pretty lengthy but lays out the rational for steaming. I can attest that I made the best fried rice of my life following her instructions. Try it! I agree with TrevorS' comment above. I buy them all the time and I've noticed that I sometimes now get a batch that's flat and hard and not as fluffy. I keep mine in the fridge and my favorite way to eat them is to pop them for a minute in the toaster oven on the "toast" setting - they'll inflate like a puffer fish - so cool to watch! Take them out (beware the hot steam), add some sliced salami, fold them in two and eat them. Soooo good! They're great to take along on a hike as well. My husband works at the computer at home 12-14 hours a day. He used the Raynor Ergohuman High-back Mesh Chair ME7ERG for about 2.5 years. The chair felt very comfortable at first, but slowly over the course of the years, he felt that the chair seat was cutting the blood circulation from his legs - the back of his thighs especially would get numb and painful after a while.
