I love my toaster-oven - the third one in many years and a better one than the last two - this one has a bump in the back on the middle grill that will hold my small iron pan or a regular pizza pan. I don't have a microwave - never have. Guess I'm a luddite! The Toaster Oven Cooking for One |

I hate it when I run out of onions and they are really expensive so when they are really low in price I buy lots and slowly cook them down with olive oil - then put 1-2 cup containers of them in the freezer. I have been doing this for quite a while - when root vegetables are at a good price I buy loads of them and roast in small pieces with olive oil and pack them in containers to freeze. I have used them in soups but also for a quick pasta sauce. I also freeze lots of slow-roasted tomatoes for the cold winter. Too late to do this for this winter but a good idea when canning tomato season hits next Fall. Can I Freeze Roasted Root Vegetables? Good Questions |
