Yum! This sound amazing. I'd skip the Tofutti and, if anything, add a dallop of cashew "cheese" instead.

That recipe sounds like it doesn't need any sweetner, honey or otherwise, especially if you use really ripe bananas. My favorite smoothie uses frozen ripe bananas, tahini, spinach and water or almond milk.

I am a vegan and almond milk has become my go to dairy substitute. I like to limit my soy intake and rice milk is just too thin my for taste. I find that it doesn't work well as a creamer in coffee because it seperates. So for my coffee I use coconut creamer.

I've never known anyone to drink cashew milk, but I do cook with homemade cashew cream often.

Almond Milk: What Does it Really Taste Like?

My favorite breakfast lately has been this smoothie:

2 frozen bananas, chopped
1 C almond milk, give or take
2 T tahini (6 grams of protein!)

I also do a raw version with raw tahini, fresh spinach, 2 frozen bananas and water. Yum!

I love tofu and barring any hidden allergy or sensitivity, I will continue enjoying it. Not all tofu is equal though. Organic is the only way to go as far as I'm concerned and I'm lucky enough to have access to somewhat locally produced organic gourmet tofu (Small Planet) in the Northwest. I generally avoid the processed meat substitutes, because aside from not being any better for the environment than meat, they aren't much healthier either. Eating consciously is about so much more than just cutting out meat and/or dairy from your diet. You really have to know where your food is coming from and consider the total cost, not just what you pay at the register.

I am a vegan and feed my dog a plant-based diet. My son has made the decision to be vegetarian, but he always eats vegan at home. I know that my choice to eat a plant-based diet made up of mostly local and organic produce and reducing the amount of processed and packaged foods I eat has greater impact on the environment than any other steps I could make. I don't believe there is a line when it comes to being "green". The fact is that our planet is hurting and we're at a point where serious action needs to be taken. Yes, it's overwhelming to think about, but we can't give up. It's about making conscious decisions everyday and taking small steps. I didn't become vegan overnight, it was a process of learning and adapting. Once you start making green choices, it just gets easier.
