The reason not to do this, is to save energy. For environmental reasons, you should only heat the amount of water, that you are actually gonna use. You are discarding hot water, and keeping rapid a boil without a lid. That is just waste. The 2:1 recipe is perfect, because you only use the exact amount of energy needed to cook the rice.
