I thought this was kinda odd the first time I heard of it (years ago), but it actually makes a lot of sense. It's the principle of Universal Design - since door levers can be used universally by EVERYONE, why would we ever use door knobs, which are difficult for some to manage? Think about having curb cuts in the sidewalk - they're vital to people in wheelchairs, but they're also helpful for mother's with baby carriages or kids on bikes.

It's not only the elderly and disabled who benefit from door levers either. When I was 14 I had a shoulder injury severe enough to limit my ability to turn my arm, and thus open many of the doors in my own house. It was extremely inconvenient, to say the least!
