I just made this recipe on Sat/Sun from the book and it's *fabulous*. Perfect texture. Best bagels I've had in years (and I'm a New Jersey expat, so that counts for something, maybe?). Just ideal. And really quite easy. Do make these!

FYI, I swapped in refined spelt flour for the all-purpose due to a wheat allergy and it worked beautifully with some adjustment to water content.

Anyway, just a phenomenal recipe. I've been hunting bagel recipes for years and this is the best yet.

I see in the article that an Eden Foods product had BPA traces detected. Eden's gotten lots of positive publicity -- and at least me as a regular customer -- because of their supposedly BPA-free can lining. This is a big concern to me. Were they lying? Lied to? Does anyone know what's up?
