i always make large batches of soup and freeze extra servings for busy evenings. But my favorite thing to have in the freezer? Egg rolls (my mom's recipe). They crisp up perfectly in the oven, and add a little fun to a simple dinner of sauteed greens and rice, stir fry, what have you. Growing up, making steamed rice for dinner was my daily chore! It always brings me comfort knowing that there's some in the house--in my early 20s I spent a year living in a studio without a rice cooker, and could never figure out why I always felt unsettled about dinner.
