I have 2 cast iron skillets. 1 new for $9.99 and the other is a vintage second hand 8 incher for $5.

Here is my question. The older one is 50 years old at least and the metal seems different than the new one (made in china). The older one flakes off bits occasionally on the underside but the interior is smooth and glossy like the new one isn't. Also the new one's seasoning seems to get eroded more easily when washing with just hot water.

So is there differences in the iron of cast iron? That was what I was hoping the article would answer. Is $9.99 a bargain or should i shell out $30 and get myself a Lodge?

According to wikipedia you must boil (kidney) beans before slow-cooking.

From wikipedia: Raw kidney beans, and some other beans, contain a toxin, phytohaemagglutinin, which is destroyed by boiling for at least ten minutes, but not by the operating temperature of a slow cooker. Raw beans must be boiled prior to slow cooking to avoid poisoning; canned beans do not require this, already having been so treated.

I love that thin blue line! It is similar to a cheese made in Quebec, Canada called Douanier. Also delicious.

Actually I get it at our little local cheese shop named which is named after it - called of course... The Thin Blue Line.
