Eggplant! Which is why I wrote such a long comment on the eggplant post the other day. It's healthy, versatile, cheap and purple! Now that's a power food.

You can also get lemongrass in spice form; I have some from Penzeys. I haven't worked with fresh lemongrass so I can't really compare, but it works well enough if I'm just adding flavor to a curry...
