Wow, thanks for all the suggestions! I forgot to add that i am at high altitude (6000 ft) so i will probably have to test some recipes before the big day. How fun! :)

i just pulled a can of baking powder out of the pantry that said "Best By Feb. 2005" and put some in a glass of water- it bubbled!
