This has been on my mind lately! Everyone is in bed--should I clean the kitchen, work, or make gifts? What I really should do is go to sleep! Oh well....

I made the spinach-parm polenta as a side (w/ roasted salmon and cauliflower). It was my first time making polenta, but it was so easy and so delicious, it won't be the last!
