I also do this but place the veggies in a plastic colander and then the colander in a larger bowl to catch the water so the veggies don't sit in it for too long.
I'm not really sure how economical this is - $60 for the bottle, then $50 for 10 CO2 chargers, plus shipping for the chargers if you can't find them at a local store. Soda water costs $.79/1 liter...
I made this dish with kale and it turned out fantastic! I cooked the kale a little longer as you suggested and added about ½ cup of chicken stock to help it out. Thanks for the guidance!
