I have Bittman's book, and I don't like it. (Though I do like his NYT articles.) It is exactly like an encyclopedia -- nice to own, but you'll never use it.

What did people do with dairy pre-fridges? They milked the cow right before drinking the milk, for sure, but what about cheese and butter? Did they keep that in cold basements or something?
It's not evolution that makes them so common. It's the fact that they are cheap. Yes, technology had to evolve to make them cheap, but technological evolution isn't to blame here.

Or you could buy wood furniture at thrift shops and paint it yourself. This stuff is not hard to replicate!
I throw a towel over it. Not as fancy and probably not as effective as techniques listed above, but it is definitely an improvement over open air.
