I make something called "Mexican lasagna" with cheese, salsa, black beans, shredded chicken, sour cream, etc. and quartered tortillas in place of the noodle layer. SO GOOD.

I'm guessing you mean "Clear a space in the middle of the vegetables and sauté GARLIC until fragrant, about 30 seconds." Sounds delish!

If looking at it grossed you out, I bet you could cover the spaces between the muffin wells with contact paper or something cute.
