second vote for an IPA. I will be bottling mine one day this week. :-)
let that beer sit for another week and see what changes, you should have better carbonation/head retention.

I suggest getting a bench capper, instead of that butterfly one. A bench capper is a little more money (but probably only about $25) and will be much easier on your hands.

melting butter, defrosting meats, I nuke a lime/lemon before I juice it for 10 seconds to get extra juice, and heating up leftovers
